5 Easy Slow Cooker Recipes

1. Beef and Broccoli


Looking for something that you can throw in your slow cooker instead of ordering in? Well this Beef and Broccoli is 10 times better than your average takeout! You can even serve it over your favorite rice!


1 1/2 lb. sirloin steak, thinly sliced

1 cup. low-sodium beef broth

1/2 cup. low-sodium soy sauce

1/2 cup brown sugar

3 tbsp. sesame oil

1 tbsp. sriracha

3 cloves garlic, minced

3 green onions, thinly sliced, plus more for garnish

2 tbsp. cornstarch

2 cups. broccoli florets

Sesame seeds, for garnish

Cooked jasmine rice, for serving


In a large slow cooker, add steak. Add beef brother, soy sauce, brown sugar, sesame oil, sriracha, garlic, and green onions. Cover and cook on low until beef is tender and cooked through, 3 ½ to 4 hours. When the steak is tender, spoon the tablespoons of the broth into a bowl and whisk with cornstarch. Pour into the slow cooker and toss with the beef until combined. Add the broccoli and cook, cover for at least 20 minutes more. Garnish with sesame seeds and green onions!


2. Shrimp Boil

You don't have to live in the south to enjoy some good old-fashioned southern seafood! Throw this in your slow cooker to enjoy this flavorful dish!


1/4 cup seafood seasoning, such as Old Bay

2 large ears yellow corn, husked and cut in to 1-inch pieces

1 1/2 pounds large, deveined, shell-on shrimp

8 ounces kielbasa, halved lengthwise and cut into 2-inch pieces

3 cloves garlic, lightly smashed

2 bay leaves

2 medium yellow onions, cut into eighths

1/2 cup chopped fresh parsley

1/4 cup fresh lemon juice

Crusted bread, for serving

3 pounds very small red bliss potatoes


Put the potatoes, garlic, bay leaves, onions, 2 tablespoons of the seafood seasoning and 4 cups of water into the slow cooker. Stir to combine. Cover with a lid and cook on low heat for 4 hours. Remove the lid and switch to high heat. Gently stir in the corn, shrimp, sausage, and the remaining 2 tablespoons of seafood seasoning. Cover with a lid and cook until the shrimp turn opaque and the sausage is warm through, 30 to 45 minutes. Gently stir in the parsley and lemon juice. Serve directly from the slow cooker to a bowl with the crusted bread.


3. Chicken Noodle Soup

Feeling sick or just wanted to complete your day with a healthy bowl of soup? Well look no further, by throwing this into your slow cooker, you can relax and have a nice meal whenever you are ready!


1 small yellow onion, chopped

1 small leek, cleaned and thinly sliced

4-6 large carrots, cleaned, peeled and sliced into 1/4″ rounds

2 celery ribs, cleaned and sliced 1/4″ thick

4 cups cabbage, cleaned and sliced into 1″ ribbons (approximately 1/2 of a small cabbage)

1 1/2 pounds boneless, skinless chicken breast

10 cups good-quality chicken broth or stock

2 tablespoons olive oil

1 Parmesan cheese rind

1 bay leaf

4 sprigs fresh rosemary

8 sprigs fresh thyme

2 teaspoons kosher salt, plus more to taste

8 ounces egg noodles

freshly ground black pepper, to taste

chopped fresh parsley, for garnish


Place onion, leek, carrots, celery, cabbage, and chicken breast, into the slow cooker with the chicken broth. Stir to ensure chicken is fully submerged into the liquid. Add olive oil, parmesan rind, bay leaf, rosemary, add thyme, and cover and cook on medium heat for 5 to 6 hours. When the chicken is fully cooked, remove from the soup and place on a cutting board. Using two forks, shred the chicken into bite-size pieces. Return the chicken to the soup. About 30 minutes before you are ready to eat, add salt and noodles to the soup and cook for 15 to 25 minutes until al dente. Serve in a bowl and garnish with parsley and freshly ground pepper.


4. Mozzarella Stuffed Chicken Meatballs

Looking to spice up a classic spaghetti and meatballs dish? Well with this dish you will be able to have a meal that is fresh and something the whole family can enjoy!


1 (28-ounce) can crushed tomatoes

1/2 medium onion, grated

1/4 cup dry red wine

2 tablespoons tomato paste

2 cloves garlic, minced

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/4 teaspoon salt

1 pound ground chicken

1 large egg, lightly beaten

1/2 cup grated parmesan cheese

1/2 cup panko breadcrumbs (Unseasoned regular breadcrumbs would work just fine.)

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

1/2 teaspoon salt

8 ounces fresh mozzarella, cut into roughly 1/2-inch cubes

16 ounces spaghetti, cooked, for serving



Stir together the tomatoes, onion, wine, tomato paste, garlic, basil, oregano, and salt into your slow cooker. Combine the chicken, egg, parmesan, breadcrumbs, basil, orgenno, garlic powder, and salt into a medium bowl. Scoop out 1 tablespoon of the meat mix, form into a disk, place mozzarella pieces in the center, and wrap the meat around the cheese, roll to form into a ball. Repeat with the remaining meat. Carefully place the meatballs into your cooker. Cover and cook on high for 3 hours or on low for 6 hours. Cook the pasta according to the package. Serve meatballs over cooked pasta.


5. Slow Cooked Mac and Cheese

Looking for food that is comforting, and something that you can't go wrong with? Well with this ultimate mac & cheese, you can achieve that by just throwing a few ingredients into your slow cooker!


1 pound uncooked macaroni

4 cups grated cheddar cheese

3 cups evaporated milk

3 cups milk

1 teaspoon dried oregano

salt

black pepper


Add all ingredients to the slow cooker and mix. Cook on low for 2 ½ hours to 3 hours, stirring well every hour. Once the sauce has thickened up to your desired consistency, you can topp with some parsley! Once doing so it is ready to be served!
